resolution is not that much of a killer unless you're trying to crop severely, or the camera is less than 2mp, or you're trying to make the proverbial "big prints", don't worry about it.
ISO is more serious a limitation as it limits your shutter speed, but people got decent shots on 400 speed film all the time.
Wildlife however is probably THE use case where you're gonna be fucked by it. The combination zoom lenses that are slow at their long end (and often need to be stopped down to f/11 or so to look their best) and a subject that won't sit still for longer than 1/1000s really is the perfect storm for wanting a body that can do 5-digit ISOs cleanly. This is why people pay $5000 for like 800mm f/2.8 lenses.
But, almost anything else on earth other than wildlife, you should be able to get "good enough for web resolution" pictures with your kit.

I want to get into nature / wildlife.

Someone sold me a decent 300mm lens, and I found a cheap TC which gives it a reach of about 450. Issue is its really only good for birds I found. And yea, I did figure out quickly that the type of photography I'm getting into is quite pricey... but doable on a budget. I'm not looking for super sharp nat geo shots, but the urge I imagine to splurge on expensive gear is already iching at me.

I'm looking for a camera that has a higher ISO, but their all pretty pricy even used. I guess I'll have bite the bullet at some point.

I save every photo as a 4500x3000, just a little over 10mp to give myself room to crop for aspect ratio and make small prints (ones I really like are kept as full size raws), and I can tell 24mp, 45mp, and 61mp cameras apart by the detail rendering, lack of aliasing, and the way the noise and lens/motion blur downsamples out even at futureproofed web size.

I save the raws for favorites because even cropping, resizing, and minor color edits on jpegs (for going on warm paper, cool paper, bright paper, matte, gloss, etc) are lossy and potentially destructive unless you're super autistic about clipping channels

Its not specifically because bayer and xtrans are shit

It would only be the same image at any size between foveon or monochrome cameras but a higher megapixel camera will have fewer bayer fuckups even at a smaller output size. Bayer blurs details and fucks up colors that are smaller than a 2 pixel grid. Xtrans is 3x3. With enough mp and a small enough target, however, a downscaled cfa photo should be impossible to tell from foveon results.

Also yes web size is trending towards 4k. Only third worlders use screens <250ppi

It takes at least 45mp to scale down to 24mp to beat good 35mm film like kodak vision. A lesser camera will still have digital CFA fuckups visible.

I'm never going to shoot a proper test shot, ever, because dpreview already did. They have all sorts of line graphs on it and you can even download the raws and edit them yourself in the program you actually use.

I can see the fur rendering differently with the Z7 at a nearly full stop noise disadvantage, slightly less digital looking, and that's 4000px on the long edge for a 8256 x 5504 camera. It gets harder to tell at 3000x_ and is mostly gone at 2000x+ unless there was a lot of aliasing.

If you never crop, don't shoot things with really fine details of alternating colors, or typically use photos for instagram, you'll probably never care about megapixels even if you did notice. I have a husky, light skinned dark haired relatives, and a bunch of pine trees. That's why both kinds of camera exist.
