I take multiple shots in complete manual mode to get the exact same settings/exposure on all areas, and then stitch them digitally.

I either do it directly within Lightroom for simple stuff, but it's quite limited in terms of projections and settings (but offers raw development directly on the panorama).
Or I pre-treat each shot, export them and stitch them with Autopano Giga 4.4. It's a great software but it's discontinued, I've heard that there are now better alternatives (Hugin for instance). One of the advantages is that it offers many different projections (picrel) and possibilities for adjustments, and it's nearly instantaneous on a decent machine. I then make final adjustments in photoshop.

Creating panos is a whole process and requires a bit of experience and thinking ahead, but it's fun indeed.

I shot it with a Canon FT QL with a contraption I made
Just a thin black plastic covering the bottom half of the frame
I would then shoot the entire roll, rewind it and then in the dark I would cut the film at the start, invert it and shoot the unexposed part
