Gonna make some smash patties with brioche style buns and of course I'll toast the buns. Homemade sriracha truffle mayo, of course I use american mayo then pickled onions on it and tomato and of course I toast the buns, nobody likes untoasted buns. Smash burgers are great. I also really enjoy big half pound burgers smoked at 225 until they reach a med rare internel temp. You get the grill really hot and give them a good sear afterwards. Oak or hickory works well. I had a smoked blue cheese that was amazing on a burger. A good american cheese like boars head is still better. If you want to go all out you can make your own american cheese with high quality sharp chedder, sodium citrate and chopped pickled jalapenos. Tastes like nacho cheese, but infinitely better. Delicious.
