It's less of a taste difference than a texture difference. This stuff is basically just organic whole milk with the homogenization of the fat left out. This means the fat is not evenly distributed in the contents and the carton needs to be shaken before pouring (unless of course you're a bit of an eccentric and like your milk with globs). I find that the taste is really nice as far as whole milks go in any case.

In any case it's still pasteurized so it's not raw milk.

Just think about it for a single second. Butter is around 80% fat. Milk is somewhere in the 3–4% range. You'd have to reduce the amount of liquid to somewhere in the 1/20–1/27 range. You'd have to find a way to toss out all the protein that there's a roughly equal amount of as well.
