Gravy is easy. Make it normal (lean on heavy cream and butter over milk) instead of flour use arrowroot powder (carbs, but only takes a tiny amount). If you're making sausage gravy, you can actually sub almond flour, but only use that in desserts or things with a strong flavor (like sausage and pepper!).
