Depends on the career and what you want to do. If you want to do something that requires a college degree, do it smart, first 2 years and prerequisites at a community college, then transfer to a state school to complete the degree requirements. A decent GPA will get you started and after 2-5 years experience will take over. It's just a necessary checkbox for some paths.
Other directions don't need it at all and it's a complete waste of time and money.

Get her on a diet then? Keto diet ideally, max 100g carbs per day. No soda if possible, only carbonated water. 200g beef steaks everyday, from some takeaway/kebab place if needed... and don't always eat all the fries. Go to college if a degree is a requirement for a job that you want and if that job will pay off the debt plus fund the lifestyle you want and put you on a path to financial freedom and abundance.
