The best advice I can give you is to pick a wrestler that interests you and just go through whatever moments of their career you can find on YouTube or Dailymotion. People who were around forever like Ric Flair, Terry Funk and Jerry Lawler are all great choices and you'll get to see them cross paths with all sorts of other big names. For Japanese stuff you can try Tenryu or anyone who was similarly great for a long time. Mexican stuff is a bit harder to get into but I'd check out some classic CMLL brawls with guys like El Hijo del Santo because they're great counters to the popular conception of lucha as being high on spots and low on drama/selling, they might legitimately surprise you if you're used to seeing the luchadores on TV or the modern indies.
