Why does it always turn out that the people who are so vocally against something always actually partake in said thing?

Projection stems from insecurity. The reason it ends up being so obvious is because people who find something detestable don't need to constantly go out of their way to make that point. For instance, someone could find gays dislikable and just avoid and not associate with gays. That's perfectly logical behavior if you dislike homosexuals. Yet, going out of your way to make 1,000 jokes about gays could reflect that homosexuals are occupying your mind/awareness to some degree...in which case, why? Sometimes, the answer is that the person is gay/questioning, with the insecurity (search for acceptance) being reflected outward. Same shit with furfaggotry and other fetishes/interests that are sometimes looked down upon.
