our ancestors ate meat they cooked over open coals, if you're worried about carbonized flesh resulting in actual carcinogens like nitrosamines and the like, buy meat without sodium nitrite and slow cook it or poach it rather than singe it, then it will have virtually no "toxins", lamb hearts are actually best cooked this way as they end up very tender

note: when you poach, don't raise the water temperature to boiling point, just to 70 cs or 160 F
