Theron Shan is the grandson of Bastila Shan and Revan, but he could not use the force because the force had other plans for him. But he tried. He went to the temple, studied for years, and put in the effort. He's also a smart guy, it's not like he was too dumb or not putting in the effort. It's a major part of his character that he's very competent in everything he does and he's passionate about his endeavors, but the force just had other plans for him.

So when Filoni has his waifu just develop force powers when she totally believed hard enough, it not only shits on the general way the force works, but it directly and personally shits on Theron Shan as a person/character. You already had people who are smart, passionate, and totally believed super duper hard who couldn't.

He doesn't misunderstand it, he thinks the visual language George used was stupid and insists on imposing something more "realistic" onto it. Personally, I see both points of view. On the one hand, the lack of visible heavy batteries on ships seems dumb, since these ships clearly pack heat and can blast most starships with ease. We see it all the time. On the other, Fractal's approach makes these turrets stick out, and on more traditional designs this is more obvious, disrupting the clean lines we're used to seeing on our starships. His Bellator is perhaps a shining example of this. It should be bristling with guns, instinctively you know it is. If it were ever to appear in a well-directed space battle, you know it would shred enemy starships. But, knowing the Bellator from the comics, and having seen other takes on it, all these little lumps on its hull look wrong to you. Star Destroyers are supposed to look clean. But he doesn't misunderstand that, he actively rejects it. I think, over the years, he's gotten better at respecting the design language while still making the ships look like they're carrying the firepower we know they do.

For Saga, it's modelled around D&D 4e and gets a lot of comparissons to Pathfinder 1e, so if you don't like those, you'll probably have a bad time. you either have to do an all-Jedi party or force no Jedi. Jedi were just THAT much better than everyone else. And what good things non-Jedi got were nerfed by erratas.
There were also hard restrictions of taking skills outside your chosen class. Lots of equipment is poorly balanced. So many NPCs really needed another look for missing skills and balance isn't clearly labelled.

And for FFG...
I'd say my favorite thing about FFG was that it was much less crunchy and more fluffy and narrative. Which was also my biggest issues with it when it came to combat. It's designed to be fully theater-of-the-mind, but when I was playing my GM turned the ranges into actual feet and we used a grid and minis to track where we were when it came to combat.

So I think both can get you the experience you want, but both are a case of "Rules as written are just guidelines"

Frankly, my advice would be to *thoroughly* read through all the books to get a really good idea of the planets and NPCs involved and then pretty much just throw the printed adventures in the trash and invent your own. I own model train sets that are less of a railroad than the adventures as written. They effectively just have the players reading out a screenplay, and even the dice rolling barely matters because the books expect you to fudge everything to the predetermined outcomes anyways so that the adventure stays on the tracks.

Instead of Luke having a bad dream about Ben and then sneaking into his Ben's room to murder him at night, they could have made it so that while away doing something, Ben went school shooter, killing the other students and Luke's wife/Mara. Luke returns to find his nephew/apprentice monologuing about how he's going to finish his grandfathers noble work, over his dead wife and snaps. He draws his saber and attacks Ben, almost killing him, but at the last minute pulling back and realizing what he's doing. Luke could have then gone into a self imposed exile, not to end the Jedi, but to find a way to fully overcome the Dark Side. He could have refused to train Rey because he'd come to believe that he shouldn't train another Jedi until he had rid himself of Dark Side. Then instead of ghost Yoda telling him that Rey is awesome, it should have been Ghost Anakin giving his son a long overdue pep talk, telling him that as a Skywalker he'll never rid himself of the Dark Side, that it's a constant challenge to be overcome and that even going through the thing that Anakin fear the most, Luke was still strong enough not to fall. Ghost Anakin could have told Luke that he loved him and was proud of him and then Luke could have actually gone to the salt planet and faced Kylo. He could have gone out and distracted him, long enough for Leia and the rest of the Resistance to escape (after using the Force to tell Leia to go, instead of Poe just randomly figuring it out). Then in a rage at being tricked into letting the Resistance escape, Klyo could have stabbed Luke through the chest. In his last moments, Luke could have pulled Kylo into a tight hug and whispered in his ear "It's alright Ben... I forgive you". Before fading out as he finally becomes one with the Force.

For small scale actions, what's not within the scope of things the average Jedi could do, vs someone "chosen" by the force (with a abnormally high Midichlorian count) like Exar Kun, Revan, Sidious, or Anakin/Luke? For example, I got into a disagreement with a friend because I believe the average Jedi should be able to stop 1 (one) bullet-sized projectile from a slugthrower fired from the distance of 25 meters facing them. My friend believes that the average Jedi wouldn't be able to use the Force to completely slow the projectile down, and they would be forced to use their reflexes to take out their lightsaber and slash the projectile, covering themselves in molten slag. However, we both agree that someone truly touched by the Force could completely slow a number of projectiles down, ala Neo in the Matrix. Which of us is right here?

His mastery of Djem So wouldn't overcome Windu's mastery of Vaapad, and when Anakin tries to use the Dark Side for an amp like he did against Dooku, Vaapad loops inside of Mace and amps him beyond Anakin multiplicatively until Anakin loses. On the one hand, you need absurd supervillain/superweapon schemes to enhance the pulp narrative - if the principal acts of evil are bureaucratic lawfare or corporate range wars over barbed wire, or milquetoast ethnic cleansing in acts of colonialist aggression, nobody really wants to bother with that when they could be fighting evil space wizards or planet-destroying death stars.

Vader should be "unstoppable" within limits.
Vader is an implacable foe without subtlety, but he is also a man of almost limitless pride (or arrogance) within the bounds of his own abilities - and he is aware of his own strength, which is considerable - and a personal set of standards. He does not waste his time, or his own physical motions, certainly not with those beneath his contempt.
His character archetype, in cinematic terms, bears more resemblance to that of the Monster than the man - Frankenstein's creation, the Mummy, the shark in Jaws, the T. rex in Jurassic Park, the other Jaws in the James Bond films. He will walk in a straight line towards his objective even if it means punching through a wall, but he is not the sort of person to throw down his cape like an anime character or Dark Souls boss then level up to Super Saiyan x3 while doing a pirouette out of a Tchaikovsky ballet slicing through 10 million enemies into 100 billion cubic pieces of watermelon, which is a horrific tendency of writers in Star Wars comic books. I despise that sort of edgy fanwank that leaked into Rogue One's endign scene. Leave that for Genndywars - I don't want it contaminating Vader.

As a side note, Vader does not actually kill, or even cause to be killed, as many characters (even nameless mooks) in the original trilogy as one would expect if they had only read books or played video games. When he says

he really means it - this Vader is nowhere near as bloodthirsty as he appears in ancillary media, or for that matter Episode III.

I'm not entirely sure yet. I was thinking of placing the players as members of some kind of imperial force under the command of another player who directs them and allocates/manages a set of resources for them to use in missions/deployments/etc. I might just do that as a GM myself but it depends on how many players I have and how involved some of them want to be. Maybe a single strike cruiser in a backwater sector or something like that. Maybe post Endor if I wanted to make the empire in general less all powerful. idk

Doing it yourself as the DM with an NPC commanding officer is probably better, imo. The strike cruiser in a backwater sector sounds like a great concept too, depending on what your players make. XO and all the division heads under an NPC captain sounds dope as hell. The Trek model.
