If you got powers from a curse or blessing or boon or whatever, it's going to be strange that at level 1 and 2 you display none of those traits. If you got cursed by a Demon to have random chaotic magic that could suddenly go off at a moment's notice and hurt those around you, and you start at level 1. You don't have any powers that actually do that, you have regular Sorcery powers that you have under control, then suddenly at level 3 that's when the Demon's chaotic/wild magic activates. That's strange and less narratively satisfying imo. At least for Warlocks you can give the same justification you'd give for a Cleric, the Patron just hasn't given you the power to do the more unique stuff yet, they control what you get and when you get it. Sorcerer's powers are their own once they get them.
