I'm a pussy so in my setting I chose both.The beastmen originally were basically a magic science experiment by the god of war to make more ferocious/specialized soldiers. They can interbreed with humans of others of their animal related genus, and possibly some of the other races due to an especially heavy mixing of genes (Most all the races are derived from the same primordial template taken from the corpse of a god). So how much animal is expressed is mostly based on how "pure" your bloodline has been kept. IE the ones with super heavy animal traits have family lines where it's mostly beastman on beastman breeding whereas if it's basically a human with ears, it's more safe to assume that tribe has likely been at least partially assimilated into humanity, as normal humans are the dominant mortal race.
