As someone who has only tested TOW and seen it played a bit at my local club, I think the main difference is a sense of 'snappiness'. AoS is more responsive and much simpler, everything works pretty much as intended and once you have the rules down you almost never have to double-check things, while TOW has tons of exceptions and edge cases that make you check the rules.
AoS also makes sure every model actually does things (even if its just contribute attacks to the bucket of dice, you still gotta make sure they're in position to actually reach the enemy), while in TOW a lot of infantry models *really* feel like glorified wound counters.
Another big difference is how wacky the rules can get. I don't think there's anything in TOW that comes even close to doing things like Skulltaker teleporting into combat with enemy heroes from across the board, or the ninja jumping the Eshin Verminlord can do.
Also, AoS has much, much less restrictive army rules compared to TOW. For example, if I have a favorite unit (say, Skullcrushers, dudes on juggernauts), AoS lets me make an army out of those. In TOW, I simply can't do that, the army construction rules will force me to take other units.

I feel like the lack of /yourdudes/ potential was always by far the stormcasts' biggest flaw. As a faction every part of their design was handcrafted to he as suitable to newcomers as possible, very much like space marines. So elite, no skin because that's hard to paint for timmy, big surfaces, and a box art scheme that's about as easy as necrons.
But then their lore is basically antithetical to your dudes? They can't really have their own place in the realms (on a non-temporary basis at least) because they get zapped back to azyr at some point. Their armour is all uniformly made in azyr. Speaking of, while marines are much more of a blank slate generic scifi warrior that you can slap any secondary aesthetic onto to create unique subfactions (egyptians, vikings, baroque vampires, romans, ...) the stormcast are ALWAYS these relstively specific art-deco greco-roman knights. They kind of dropped the art deco with thunderstrike, but still.
I love coming up with /myguys/ ideas, even for factions I don't even play but for stormcast nothing ever really worked. Only when I just ignored and went against canon I managed to cook up some stuff.

Sounds like it's a cool casual game then. What about list building, I can see that a lot of units have options for reinforcing them. List building is imo quite boring at the moment, it's pretty freeform which can be nice depending, but in general there's just not a whole lot in the way of options like artefacts and stuff. Basically your list is divided into regiments, you pick the leader hero of each regiments which depending on the model lets you pick certain units (but this is usually pretty permissive). That's basically it in terms of structure.

Actual god models like alarielle and nagash tend to be niche since they eat up so many points, but normal centrepieces depends on the model and faction. Some work perfectly without them, some are actually fucking useless, some add a nice twist to the army, others are basically auto-include.
You mentioned bonereapers which has katakros who I'm pretty sure was pretty much mandatory before unfortunately but that was before the new battletome. I've heard he was somewhat of a noob trap right now but I'm not sure.

To reinforce or not reinforce often depends on the unit's purpose. Skirmishing and screening units rarely want to be reinforced, they're better kept as cheap as possible. Hammer units and certain hordes usually want to be reinforced (for example, Slaves to Darkness Chosen and Idoneth Eels almost always want to come in reinforced units to deliver their proper punch) and reinforced units usually take buffs better.
How much you want a centerpiece varies from army to army, I think. Some have really, really strong ones and are reliant on them for various reasons, such as Flesh-Eater Courts who really want Ushoran or a king on monster because they're reliant on heroes and their foot heroes are very squishy, so having heroes with actual beef is important, while others factions, like Cities and Ossiarchs can get away without them. The OBR book is still pretty new, but I've tried games with and without Katakros, and while he was good in the game I used him, I didn't critically miss him in the other game. Nagash is probably an active detriment in their case, he eats far too many points without generating discipline.

Looks fine, you can do something out of that. If you get a soulreaper, the dude with the scythe, you can build a funny castle that is quite sturdy out of the Immortis, Harvesters and Mortek Guard, and the Liege-Kavalos plus 2x5 deathriders is kind of a meme thing that's very good at skirmishing (and basically useless at actual combat).
Archers would fit perfectly into that lineup as the means to actually force your opponent to come at you, without them a canny opponent will just go around your tanky wall and attack the softer parts like the harvester and the cavalry. A reinforced archer unit actually does pretty good damage and can't really be ignored, but you can put the above mentioned wall in front of them and force the enemy to go through that first.

I think the additional chambers went a long way to remedy this issue, but I think they are almost too little, too late in the eyes of many I think. The first impressions are hard to shake, and that first impressing being incorruptible, unkillable saviors just isn’t that compelling in the Warhammer settings. The Cogforts not being bound solely to the CoS because those crewing them are regular, corruptible humans already introduces interesting directions you can go with their /yourdudes/ lore that you can’t with SCE without breaking the lore.

I wish they were all arch knights instead of just being lead like one. They're basically cavaliers on foot, which to be fair was to be expected but still. Also boar guy is a lot better than the other variation, I feel like if you're going to dual wield melee weapons it has to be two of the same ones (and no swords unless they're curved!). A flail and a sword looks like it's just begging for something to go wrong.

There's all kinds of cataclysm bullshit going on, there are Wood Elves in Cathay, Lizardmen in the Dragon Isles and Dwarfs in the Mountains of Mourn (in Lustria too, if the "cave of the bearded skulls" is still canon).

But here's the most likely scenario:

Lizardmen and Slann lived in the Southlands and Lustria both, and they made (black) men and (black) halflings in both.
I don't remember how Lustria and the Southlands were connected, but Lizardmen could move and communicate easily between the two. There is also some tunnel maybe dug by the Skaven maybe predating them where Sotek went from Lustria to the Southlands when it disappeared.

At this point the lizardmen die off, and the Men+Halflings are left in the Southlands and Lustria, abandoned.
The Men in Lustria remain unevolved tribes, the Halflings are the Pygmies.
The Men in the Southlands migrate North, alongside the Haflings of the Southlands.
No Halflings are left in the Southlands, they all migrate North with Men and while the humans become Old World Humans the Halflings occupy the Moot.
