They're big, centered in black mana, and they very often have flying. Devils on the other hand are all about pain and torment. Devils usually have some sort of ability that repeatedly inflicts damage, amplifies it, or feeds directly off of the pain. They are smaller creatures almost exclusively found in red but usually have some positive keyword, but rarely ever flying which is incredibly common for demons. Look at their tokens if you need further example of this. Demon tokens are big flyers usually paid for by a demonic contract or ritual sacrifice. Devil tokens are small and easy to kill but pop for an extra bit of pain to lob anywhere you want. Cards that produce them often make them as expendable lackeys to cause mayhem.

The only way you'll ever be happy with MtG writing is if you just look at some of the cards with the character and make up your own headcanon about them. That's why so many people think blocks made good stories when in reality it's because nobody was reading the actual stories back then.
