Logically, they'd head towards whatever safe havens they knew of and for most that should be the nearest capital. For those in far flung settlements it's not unimaginable that the nearest capital is one of a different culture group. Hundreds to thousands of years of a handful of survivors making it to another kingdom's capital could possibly explain the ethnic mixing, though we're obviously putting way more work into thinking it through than they did if we go with that reasoning.
