Thailand is tight with their stamps. Mexico on the other hand puts them down wherever the hell they want to. Taiwan departure did that too, couldn't bother putting it next to the entry stamp.

Ukraine have consistently carved out a space in the back of my passport, and religiously build up their stamps from the bottom right to the top left, in a 2x5 grid. Absolutely based.
Vaguely remember them changing the stamp to be more European recently though, which doesn't quite fit the width of the passport in 2 columns neatly.
