I want to move to Los Angeles (I'm Irish) to pursue my career of working in film and the arts. Is there any effective way of doing this short of overstaying a tourist visa? I have a degree BA in anthropology and also experience working as an archaeologist. What are the chances I can get accepted on a permanent basis using these attributes? I also want to have the option of one day returning to Ireland briefly in case a relative gets sick or for a funeral or something before returning to the US which is why overstaying a tourist visa is not a great option for me, especially since it would require I work underhand or in fast food to earn a wage.

You are moving to one of the most densely populated and expensive cities in America, with above-average wealth inequality. With a BA in anthro, you will be working multiple kinds of these jobs just to barely afford food and rent. That's just how it is.

Just showing up there with no contacts and no resume is not going to work at all, LA is full of people dreaming of "making movies" with no experience, the competition is fierce -- you want to have a leg up on those folks before going there.Also, look into production that is leaving California -- the percentage of US film and television production happening in the state declines every year, in LA it is down to around 18% of US production. A lot of "runaway" production happens in Canada, in Atlanta, Florida, North Carolina, etc. And there will be less competition for entry jobs in those locations.
