depends. it's a pretty big state with a lot of nothing in between each city.
visit las cruces & mesilla for a day, maybe two. not a whole lot to do here but shop, drink wine and hiking. white sands is nearby which is an amazing park to hang out for a day. el paso is also a short drive away - it's a pretty boring city but worth spending 3-4 days to tour and eat solid mexican food.
carlsbad caverns is amazing, but in the middle of nowhere.
roswell is not worth the drive. but if you go, everything can be done within 1 day and it's mostly tourist trap shit. i want to believe, but after visiting, i'm pretty sure the ufo crash was just the gov't trying to cover up an experiment that accidentally killed some kids.
albuquerque/santa fe: lots of craft beer, cafes, crackheads, museums, shopping and good food. plenty of outdoor activities if that's of interest. i'd spend 2 days in santa fe max.
can't speak on the rest of the state, those are the only places i've frequently visited.
never been to taos, but i plan on going this year. i've heard is very bougie, but whatever.

It's got an appealing downtown by NM standards, lots of nature to explore in the Gila National Forest, sunny climate that doesn't see extreme summer heat or winter cold. Silver City is for boomers who don't want to sizzle in a soulless Phoenix suburb. I only spent a couple days there. Truth or Consequences is another quirky town worth checking out.

Any and all nuclear history museums and sites are cool. White sands, Gila catwalks, many hot springs, petroglyphs, and unique geology like Tent Rocks. Check out Santa Fe Spanish architecture. Santa Fe is unlike any state capital, really cool town to visit. New Mexican food is good too.

Dont visit in spring. It’s too fucking windy and dusty April-June.

Taos, Angel Fire area has great skiing, comfy mountain town. I go here often in the winter. If you're a hunter it has natural herds of elk.

Santa Rosa has a great diving area surprisingly called The Blue Hole.
