I've got about 3-5k budgeted for travels. Never been out of the USA. I know a little spanish, not much else. Any suggestions on where to go?

How long are you looking to travel? Mexico City->Cancun/Tulum is a pretty fun adventure. Extremely safe, good food, tons of stuff to experience, and extremely entry level.
