Brushfires will be burning everywhere in the hills. Waterfalls in the national parks are down to a meagre trickle. Thais don't hike, so good luck getting into nature even if you do rent a motorbike or hire a tour guide to take you into the national parks (which charge a pretty fat entrance fee for foreigners). You'll probably have to go crashing through the undergrowth and step on a snake or two if you really want to immerse yourself in the landscape. Stop walking and the jungle ants will swarm your feet and start biting you. Go to Taiwan if you want to go hiking in nature.
