Malaysian food is excellent—particularly the fusionish Straits Chinese-Malay-Indian cooking that evolved around Penang. Singapore’s version of basically the same cuisine is also very good, although the Malaysian version is its equal and a lot cheaper. Singapore is better for international cooking of just about all kinds. Indonesian food can be great (with many similarities to Malayan cooking) but it’s generally milder and ingredient quality/hygiene standards can be somewhat lower.

Burmese food is often excellent but hygiene standards are more often than not quite bad. I like Burmese restaurants abroad more than in Myanmar. Laotian food can be very good if you like a lot of capsaicin, raw meat, and sticky rice—most of what most tourists eat in Laos is basically just Thai food, while the best stuff is at heart fancified Isaan food. Protip: if it has coconut milk, it’s not really local.

I don’t really like Filipino food, but I haven’t spent much time there. I hear they’re good at roasting pigs. Most of the food on offer there seems to have close analogs elsewhere in Asia that are better.

Malaysia/Indonesia/Singapore: Lot of overlap between each other, but really solid all the same. Indonesian food is slated to be the next trendy Asian cuisine, if not already. China, Japan, Korea, and Vietnam had their time in the spotlight, next up is Indonesia.

Laotian food seems to vary widely by region. In Vientiane you can find cuisine from all over the world. Here in Xayaboury province near the Thai border there's little I've eaten that is much different from Thai food. More limited selection of food due to lower local spending power is the primary difference from Thailand.

Southeast Asian food is more difficult to eat than Western goyslop. That's why people here are rarely fat. It's also why foreigners obsess over Southeast Asian food so much, because it's no bangers and mash. Intense and spicy flavors, chewy meats, steaming hot broths, sticky rice that is difficult to swallow, fish full of bones. Eating can be an ordeal, but the end result is feeling more sated than you do after wolfing down some bland western mush.

Indonesian food is very underrated. Though it doesn't have the freshness of Vietnamese or the delicacy of Thai. Think big plates of tasty greasy noodles, bbq pork. The kind of feel-good stuff I'd cook for myself at home if I had the ingredients. My favorite is gado-gado, kind of a stir-fry/salad hybrid with peanutty sauce.

Traditional ways of preparing meat in Laos can be awfully sketchy. Go into the soup place where the locals eat and there's intestines all dried out from sitting in the open air for so long. Seems it helps the meat soak up the broth flavor better.

It's quite a bit cheaper than Thailand when you compare the provincial cities of the two countries. The young Lao ladies are indeed a beautiful sight in their traditional attire or school uniforms. Other countries, the girls are all dressed like trash and giving sidelong glances like "eww see that guy looking at me, he's so creepy right?" Not here. Here the girls are taught to be both ladylike and friendly to strangers. It's very endearing for little girls in dresses to pipe up "Hello farang!" when they see me walking by, and giggle musically when I wave back.

Indos can't eat pork, so they miss out on a lot. The barbecued pork ribs they serve here in Laos are fucking amazing. Pork laab is great as well, but make sure you get the cooked pork option.
