Chef here.
Just for the record, this isn't actually something that happens. There garlic cannot "liquefy" when dropped into a hot stew or soup. The garlic will caramelize and reduce in volume, yes, however to assume that it would behave like a fat and change state when heat is applied is ridiculous on it's face.
>>
Are you Italian? It's something only Italians are capable of doing.
>>
OHH!
>>
No one asked, stovecuck
>>

Wow, it's almost like a narrator in a movie is subjectively biased rather than presenting an objective reality.
>>
Paul Sorvino here: I personally invented liquifying ultra thin garlic slices.
>>
>>214163348
true but if you threw in the ultra-thin garlic slices for just a few seconds before adding your liquid they still wouldn't burn and it would be basically the same as using chopped or minced garlic so there's nothing wrong with it
>>
>>214163348
Actual REAL chef here. The acidity of the tomato sauce chemically changes the composition of the garlic and therefore allows it to melt.
You, sir, are the dumb one.
>>
>>214163348
>The garlic will caramelize
>Caramelization (or caramelisation) is a process of browning of sugar used extensively in cooking for the resulting butter-like flavor and brown color.
Simple question, yes or no: Does garlic contain sugar?
>>
>>214163445
Actual REAL chemist here. The acidity of tomato sauce absolutely does not chemically change garlic's composition to make it "melt"; it simply causes a physical breakdown of the cell walls, allowing the flavors to mix and the texture to soften. Any chemist knows that "melting" is a phase change, and this is merely a simple case of acid hydrolysis.
You, sir, are the dumb one.
>>
>>214163478
All fruits and vegetables contain some sugars
>>
>>214163348
they dont literally mean it will liquify. they just mean it will effectively disppear in the sauce because it's so thin and small
>>
>>214163498
Oh yeah? Well I had sex with you're wife!
>>
>>214163510

DOES GARLIC CONTAIN ENOUGH SUGAR FOR ANY REASONABLE AMOUNT OF CARAMELIZATION TO HAPPEN, YES OR NO?!!!
>>
>>214163348
>garlic cannot "liquefy" when dropped into a hot stew or soup. The garlic will caramelize
The temperature of a stew or soup is too low for caramelization.
You are not a chef, or if so, a very bad one.
>>
>>214163348
Chef here, op is wrong because if you cut the slices thin enough they will liquify in the oil, the whole process is called "liquifying" and is used when making italian food. Hope I cleared some things up

Onions are approximately 89% water which makes onions 89% capable of being a solid or liquid or a gas. It is entirely possible for an onion to liquify while burning off the 11% carbon.
>>
>>214163606
What the fuck? I typed Onions, not Onions
>>
The liquefy in a pan thing is exactly what an greaseball who thinks he knows a lot about food because he's italian would say
>>
>>214163567
Yes, why not just google this? All foods contain sugars, any time you brown or sear anything or create a crust you are getting the sugars to react, break down into simple sugars, and caramelize.

>>
>>214163567
Yes retard, but what actually happens is a maillaird reaction, as proper caramelisation would require a much longer time with a very tightly controlled temperature range (nowhere near as forgiving as say onions) as garlic will burn and turn acrid very easily
>>
>>214163348
You're correct. The reason he does this is because he gets to spend the entire meal prep doing this meaningless thing which sounds important but gets him out of doing anything else. He's a wise guy, you see.
