Ultimately, the purity is a big factor for distributors like Gus (especially when he was trying to expand intentionally) because drugs are sold by mass. Lower purity means less product yielded from a cook, less product to be cut, more useless weight when transporting product, etc. Walt having higher purity means Gus can make/transport/sell meth while keeping costs low.
