There are probably 20x as many dedicated amateur chefs who can cook a perfectly medium rare steak or pull of a very pleasant bolognaise than there are which can poach an egg properly or make a French omlette.Fire on/off is a common french technique, you absolutely need it to prevent hollandaise from burning when making it.
