Live In Pompeii was shot on 35mm.

16mm is inherently more grainy than 35mm.
Did Jackson go overboard with the digital noise reduction? Yes, but comparing it to 35mm footage is unfair.

Depends on which cut you're watching there's the 1972 cut DVD which seems like they just made a transfer of a VHS and then there's a restored 1974 cut which seems like an actual proper remastered DVD. You'll have to guess which is which because I forgot to label them.

Periods in color film are often defined by new technologies in cameras, film stock and projection. With technicolor they shot everything on three separate strips of monochrome film in different colors which when projected resulted in a full color image. Looked great but cost a lot and you basically couldn't shoot outdoors since you couldn't control the lights to anywhere near the level you'd want. By the time the 70s rolls around they're releasing high sensitivy color film and now you can shoot in low light conditions and often without any artificial lighting at all but that came at the cost of colors being thin as you put it. This is when people lile Kubrick decides to make movies like Barry Lyndon which has several famous low light and/or natural light scenes that wouldn't have been possible to do in color until that point.

I don't know what this thread is about exactly, but now is the good time to say that Criterion has been butchering movies for at least 10 years and more via third party hackjob companies such as Ritrovata, and as a result, hundreds of classic movies, mostly black and white ones have been completely ruined.

Small wonder their criterion closet series has been completely zoggified.

What mainstream movies outsource to jeets these days is CGI, color grading is done by millenial zoomer hacks at home.
