pic rel has some great scenes of being hunted by subs, including one where one sub calls a ship on radio and literally goes awoooootherwise it's mediocre but the night scenes mentioned are worth watching it

Crimson Tide has much better monologues and acting, and a much more plausible plot. It thankfully doesn't have shitty Russian accents and bizarre American conceptions of what Russian officers are like. CT is nothing more than a solid movie, but Hunt is outright bad.

I'd say start with Cold Waters is you just want pure sub action. Sea Power is overall fleet management. Just be aware they are MASSIVE time sinks even if you're somewhat familiar with the ships/weapon systems etc. Cold Waters has a really cool sonar model, really immersive.

crimston is kinda mid for scott but hackman and denzel are more fun to watch than connery and baldwin and the dialogues are sharper and there's more tension
