Stephen Chow's movies are all amazing but OP was asking about stuff to watch as a newcomer to the genre. Watching those movies coming in blind is sort of like watching Deadpool and Wolverine as your first foray into capeshit. Sure you'll probably be entertained but there's so much you're not going to pick up because you have no foundation in the genre.

The western made martial arts movies tend to be more grounded. Check out Undisputed 3 and Ninja 2 with Scott Adkins or The Redeemer with Marko Zaror. Also check out The Raid and The Night Comes for Us, both from Indonesia. .

Arrow's Shawscope sets are a great collection of essential, high quality Shaw Brothers kung fu movies. You don't have to buy them, just look up the movies in the sets and stream them.

Skip ahead to The 36th Chamber of Shaolin and watch that first, and then pick whatever movies from those collections sound up your alley. They're all at least good, most of them great.
After that, Shout Factory released a bunch of Shaw Brothers sets that also have a lot of good movies. By this point, you'll develop a good sense of what directors and actors you like.

Then you can start on Golden Harvest, with Bruce Lee, Jackie Chan, and Sammo Hung
