Henrys and Spencers were used in the Civil War, sure the cowboy guns in film were often specifically more modern leverguns like the mid 90s models that became popular, but people don't really care that much about such accuracy; why majority of WW2 films German tanks are usually Cromwells or some shit like that.
Now if lever action repeating firearms didn't exist at all during cowboy times you'd have something to bitch about. But they did and were common enough to be plausible for a film.

It really is hard to explain to the average layman with a mental image of the wild west informed by pop culture just how much of a fantasy a lot of that shit was.
Like go read what actually happened at the OK Corral, the most epic gunfight in the west, and its a couple of guys blasting a couple of eyes down an alley where they were just a couple feet from each other.

Westerns don’t have to be set in the uttermost wildest, ungoverned period of the American west. Big Jake is set in like the 1910s and has a guy riding a motorcycle in it and it’s considered one of John Wayne’s best westerns.

They weren't trying to be historical documents, they were treated as the slop audiences would happily sit through while they blew the big money on elaborate musicals.

Nobody cares because they are still lever actions which are plausible at the time. This is like bitching about John Boorman's Excalibur for having 14th century plate armor for the dark ages; yeah it's technically not accurate but it enhances the story and visuals which is the point of a TV and film.
