The story is better in ultimate hellsing, and it has a better OST and better pacing, and better characters, more gore, horror, action, comedy, and existential horror.

old, it's not even close. there is no remake of anime that is better than the original. i'm watching Trigun Badlands and it's DOGSHIT. dropping it because it has Netflix 2 FPS animation and they made my boy look like a dyke. Ultimate has some kino scenes though.

The original has much better character development, world building and pacing and maintains it's tone and atmosphere better without the totally out of left field terrible "funny" moments of Ultimate. I don't care about which is more manga accurate and that it's slightly less edgy, it's just a better show than Ultimate. Just a shame it never got a continuation and we got Ultimate instead as a reboot or whatever. Ultimate has more blood and guts and reaches the end of it's story, but the entire story feels so rushed, condensed and uninteresting and lacking any kind of depth.

I'm actually making my way through the 2002 series now. The low budget means it struggles to represent the more action-packed parts of the story. The Valentine Brothers' attack on Hellsing HQ takes so many shortcuts with the animation and leaves so many pieces out that some sequences are barely there, playing out more like a panel-to-panel survey of a storyboard than an animation in natural flow. The part where Walter starts slicing and dicing stands out as falling particularly short of the intended effect, as it tries and fails to suggest a lightning-fast melee using only the bare minimum of frames. That approach just doesn't work here.

I do like Police Girl in this one, though. They never pass up an opportunity to put her in a sexy pose. Regrettably her English dub is TERRIBLE but I've come to accept bad dubs as part of the anime experience.
