Muffins will never be the same. After the Tangiers, the big corporations took it all over. Today it looks like Entemann’s. And while the kids eat cardboard muffins, Mommy and Daddy drop the house payments and Junior's college money on coffee cake. In the old days, bakers knew your name, what you ordered, how many blueberries you wanted in your muffin. Today, it's like checking into a Dunkin Donuts. And if you order muffins, you're lucky if you get an equal number of blueberries in each one. Today, it's all gone. You get a whale show up with an order for a dozen blueberry muffins, and some 25-year-old hotel kid is gonna want his loyalty card. After the baker’s union got knocked out of the box, Betty Crocker tore down practically every one of the old bakeries. And where did the money come from to build all the industrial commissaries? Junk bonds. But in the end, I wound up right back where I started. I could still pick blueberries, and I could still put an equal number in every muffin. And why mess up a good thing? And that's that.

If you take it literally, the EXACT same number of blueberries, put them in berry by berry, yeah, that takes way too long, but a measuring cup gets you approximately the same amount and weight. That should satisfy Sam, especially when you consider the ridiculous discrepancy that upset him so much in the first place.

In prison, breakfast was always a big thing. We had a cup of coffee and then we had a muffin or scone. Paulie did the prep work. He was doing a year for contempt, and he had this wonderful system for doing the blueberry muffins. He used a jeweler’s loupe and tweezers, and he used to count them out individually so he’d get an equal amount of blueberries in every muffin. It was a very good system.
