You need to understand it wasn't just travelling and eating good food, it was doing that for half the year, every year. Trying to track down and manufacture "authentic" feeling food experiences everywhere across the world on a tight schedule, every week. And yeah he had a team, but he was very particular about his image so I'm sure he was very involved. And if not he still has to get there and be on, all the time, to give them something usable. Eventually the novelty wears off and it's just really fucking hard work. He should have cut down his work after it ended his marriage.
