And most people bitched and moaned about the things that he then changed so dont blame him. The 2006 editions the resolution is atrocious. I think the blurays are much closer to what's intended to be seen. The 2006 editions are not enhanced for widescreen. So like on a widescreen tv you'll black bars on all 4 sides of the 2.35 aspect ratio movie.

There's almost zero market for unedited films so they don't put them on home video. You CAN however watch a version of Star Wars that's fully compliant with the director's original vision. Just pick up the 4K of Star Wars: A New Hope on Amazon for $27. Hope that helps!
