I just watched the scene again twice and at no point does Dooku kick Obi-wan in the ass. Dooku never performs any kicking attacks whatsoever. This seems like a pretty significant plot hole in your post.

I mean he did more than make it out, he straight up killed Darth Maul. At least before they retconned it in the cartoon and had Maul survive, but even in the cartoons they had him kill Maul again, and more decisively this time, so by all rights he's got a decent winrate against Sith Lords. He just can't beat Dooku in particular.

Even with the Rule of Two, there will sometimes be three Sith: the Master, the Apprentice, and later an Apprentice of the first Apprentice who helps him overthrow, and then become, the Master.

In the prequels the Rule of Two didn't seem to apply, because there were Palpatine, Maul his official apprentice, and Dooku who was not an apprentice nor was he training an apprentice of his own, all active at the same time.

I believe Sith assassin is not mutually exclusive with being a Sith Lord. Maul was just the only assassin that was also a Sith Lord, hence the Darth title. Which of course he lost when he was replaced by Dooku (Darth Tyranus)

Fair enough, but Ventress was actually introduced in Tarkovsky's Clone Wars series which was kind of a big TV event leading up to the release of episode 3 so I feel like a lot more people would be familiar with her due to that. Same with how they know Grievous because of this series, which also explains why Grievous has breathing problems because he got his chest crushed a few minutes prior to the events of the film.
