Watch the movie closely and notice that the thing wants to absorb as many organisms as possible as a means of singular consolidation. First it becomes a giant disgusting dog blob before that is killed, then it starts from scratch with Palmer and Norris. Norris-thing inherits his heart disease and is unfortunately incapacitated so it splits its head off to survive, but then Palmer-thing decides the head monster isn't even worth it so it alerts everyone else to kill it. Blair-thing then absorbs 2 other people and becomes another behemoth creature like at the start of the movie, so clearly it WANTS to reach this kind of state and have a metamorphoses where ideally it's 1 organism composed of countless others. It even flexes this desire by bringing back the dog-thing at the end. Blair's computer simulation backs this up. The thing CAN split itself into different parts, but it has a preference for absorbing other organisms into 1, and the different parts are all a connected hive considering even after the dog-thing dies it retains its DNA from Blair-thing.

It isn't complicated what the thing actually "wants." It starts out as a dog. It ends up as a human capable of building a UFO from scrap metal. If it reverts to lesser organisms like a spider-head, it's willing to sacrifice it in preference of being human. Blair explicitly says in the movie "it wants to be human." There's no mystery here. It's the tagline of the movie that it's "the ultimate in alien terror." It's not trying to conquer the earth and turn everyone into things, it's trying to become the ultimate species by absorbing other ones. By the time it absorbs Blair and the original alien pilot, it has the knowledge to create a UFO from scratch. That's a pretty fucking substantial upgrade. It's reasonable to conclude that the thing just wants to return to space conquering other species because it has no further use for humans.

One could argue that it's quite convenient to have access to a variety of machines designed to travel through snow and ice in a land covered by snow and ice. It's also convenient to have access to airborne transport that can simply fly over the snow and ice.
Inconvenient transportation would be a jet-ski. It would only be of practical use on the coast, and even at that, the water would be extremely cold, so you would probably die using it. Death, as you might imagine, is quite inconvenient.

The movie even had a glorified "I'll destroy everything around me because I'm going mad" character just to make it easy for the antagonist to win. There's not one horror movie in existence that is down to earth in any way that matters. Not that the Thing is a bad movie, but horror movies are a shit genre because of how convenient everything has to be for them to work.
