I actually saw it at the cinema and the UK release looks the closest to my memory, that one on top looks overexposed or something. Films used to have a bit of a dull and slightly underexposed look in the highlights like that middle one. I think the DVD just looks good because all the colors/details are heavily compressed and slightly more saturated.

Because faces and hair have a lot of fine wrinkles and detail to them, and the higher the resolution, the more there is to get smoothed out.
Its also the same thing as the uncanny valley, we're social animals that invest a lot of energy into paying attention to the minutia of people's faces (even if you don't consciously notice it), so when you get something artificially smoothed over on a face, it stands out like a sore thumb more than someone's clothes.

You’d need to find the actual art/artist that painted the cells and adjust the color to reference, and the computer just lets Disney put out a fast product that’s “good enough” imagine if they hired the autists who attempted to restore A New Hope themselves.
