Because there is profit to be made.Rowling owns the IP, companies want to profit off of it. Hogwarts Legacy and the Universal Studios themed park show it's still a very popular franchise.The books are timeless and will be popular with every new generation of kids.The first two movies were good then fell off a cliff.There is probably also a personal reason where Rowling wants to pursue a new vision for the franchise given her falling out with the old leads.
