Makes more sense in the context of televised sci-fi. The guy who designed the uniforms for TNG was William Ware Theiss, the same guy who designed the ones for TOS; so his frame of reference for sci-fi costumes would have been stuff like "Space Patrol" and "Captain Video and his Video Rangers" not the modern stuff we think of. Pic related shows his original design for Spock's uniform and the TNG one, you can see he was riffing on older ideas. That's one of the things I like about Trek, it retains a lot of elements from older science fiction that have dropped out of the mainstream.

Sisko lost his wife because of his duty to Starfleet. In Jennifer's absence, Jake, his dad, and Starfleet are his whole fucking life. Ben Sisko is married to his uniform.
Now, he should care less about Eddington than he does but that's because it was obviously intended for Eddington to be Cal Hudson instead from the two-parter previously, which would make Sisko's personal investment in a defense of the uniform way more sensible given he and Hudson were best friends and came up together.

Why wouldn't Sisko take it personally? Starfleet is his life's work. He lost his wife in pursuit of his duty because he cares about it and thinks it's that's important.
