I'm not a film theorist so I can't articulate it exactly but why do the sets, costumes and locations in the original trilogy all look so real and believable while this with the budget of a small African nation looks like a highschool production that would fall over if you bumped into a wall.

The money simply doesn't go towards building sets and hiring professionals, it all goes to marketing or CGI, or money laundering or whatever. It's not so much a lack of skill of the people on-set (probably) as a deliberate strategy on the producers' part. TV series are a minimum-effort business and they just don't care to make a quality product when a shoddy job will do. In part it's also an issue of your expectations, I'd imagine. You've failed to recognize the work for what it is (mass-produced slop) and treat it as something it's not (an aspiring work of art). Like going to a high-school theater production expecting Broadway. It's not that they've failed, because the series probably produces the expected results, it's you who fails to manage your expectations.

You have to make it beautiful and believable, but then you also have to make it worn and aged. This last step they always ignore.
