Then in season 7 we had the faster-than-jets Dragons and in season 8 the extremely underwhelmed war against the Others which was hyped since season 1 and lasted 1 night and I realized the guys behind the show just didn’t have any idea what they were doing.

It's pretty clear that the point he's trying to make is that there's no such thing as a prophecy, a lot of people in the show and the books fit the prophecy of Azor Ahai and future generations will probably consider those people to be Azor Ahai, but the truth is that none of them actually defeated the Night King, the one who did it was Arya who was never a part of any prophecy.
