It's similar to how the Engineers used black goo to grow those gray biomechanical undersuits to replace their natural skin. By default, the black goo creates things like Neomorphs and it uses various kinds of delivery systems dependent on the situation. David used it to create an organism that's always roughly the same biologically and always uses the same delivery system, just for the satisfaction of having some offspring that's guaranteed to spread while retaining its original form designed by him. The Engineers didn't care about such things due to being able to reproduce naturally, and dumping black goo on a planet is a more effective weapon than xenomorphs anyways.

And the darkness setting was a little too much.
