How did George drop the ball this hard?

He had previously killed a king who wanted to burn the world; slaying the Night King would have been stopping one that wanted to freeze it, a perfect parallel. It would have solidified his redemption, proving his true honor lay in protecting the living rather than in blind loyalty. Moreover, Jaime's Valyrian steel sword, Oathkeeper, was forged from Ned Stark's greatsword, Ice, making him literally and symbolically equipped to end the existential threat. While many found this thematically fitting, it was Arya Stark who ultimately slew the Night King; while Jaime's story concluded with him anticlimactically returning to Cersei and dying with her at the Red Keep.

Jaime became a king in the Gurm’s original outline and there is foreshadowing left in the first book. Brian thinks Jaime looks like a true king and Ned Stark saw him sitting on the Iron throne after killing the Mad king.

The Night King should have won and turned most major characters into zombies. That would have really subverted expectations. Maybe have Euron (the real Euron from the books, not the imposter from the show) defeat the white walkers, but his rule of Westeros proves even more dark and brutal than the alternative. Who says GoT or ASoIaF needs a happy ending?

If you wanted to go full allegory/cautionary tale, the Night King winning was the way to go.
I guess in this case GRRM wanted to be only semi-edgy and have this particular story be more hopeful, since in the real world we do have the power to put a stop to what's been slowly killing us; we just don't. And may not try until it's too late.

It also would blend far better. As it is, the early GoT with all its political intrigue (when it was actually good) feels completely pointless since it all just comes down to a cookie-cutter good vs evil conflict in the end, and good wins as expected. The early political intrigue would have carried far more weight if mankind had lost in the end, but had they set aside their petty quarrels from the beginning and joined together as one big army, like Bobby B envisioned, they would have held back the night. Ned Stark's senseless death, Tywin's thirst for power, Stannis' ruthless devotion to duty, none of these things really have anything to do with the white walkers in the end, and it's just not a cohesive story, when it easily could have been.
