I think a big part of the problem nowadays is high resolution tv/monitors. The screen can show details now so they feel like they must fill in details. So instead of a spaceship with a smooth curved surface they cover it with pipes and panel lines which would make it completely worthless in an atmosphere. Same problem happens with Warhammer 40k models where they can't just leave a flat surface on a model, they have to fill it in with detail even if painters would rather have a spot where they could slap a decal.

Corpo Hollywood's devolution to "muh brutal realism" in every aspect of media it produces now, which as a consequence makes everything unmemorable busy slop. If you watch TOS, it's heavily rooted in ship adventure movies and all the plots wouldn't seem out of place on a wooden sailing ship traveling a fantasy world. Even the iconic communications whistle is a Boatswain's Whistle sound effect ripped directly from Horatio Hornblower.

It started to get more typical sci fi in TNG-VOY but even during the golden age Star Trek was still mostly 16-19th century adventure serial in spirit, and most of the "sci fi" was just technobabble to legitimize the plot.

Unfortunately sci fi attracted a following of midwit nerds who didn't understand what sci-fi was or even why it appealed to them, so starting with gen x/millennials there was a push to put more "science" in sci fi resulting in the extremely boring stories nobody really cares about even remembers a few days after watching because it turns out yeah, science is actually really fucking boring and limited (especially in a story telling sense) and trying to make science fiction more "believable" and "realistic" is self defeating retardation.
