A long siege wouldn't have done that and might rally the population of Rohan.Remember his original plan would have been to all out attack Rohan while the king was being mind controlled by his puppet. Helms deep was his back up plan, which would have worked if Gandalf didn't ride and gather the Riders.
Book wise, they knew Rohan was on its way so they had to clean this up fast or they'd be stuck between two fronts with no hope.. What they didn't know that Ents were on their way, which ultimately is what killed them all
