It is logical that the rebels have inferior communication options.Plus Leia went to Tattooine to pick up Obi Wan and was pretending to be an innocent senator. They could have dropped off the plans with another courier somewhere to maintain secrecy. It was supposedly only after analyzing the plans they discovered the chain reaction that would blow up the reactor.
