Why does getting bit by a vampire turn you into a vampire?

How come zombie movies always explain the "infection" in scientific terms, whereas vampire movies don't even address the obvious question?

I was curious and looked up Varney's story just to see if it was consistent. First and foremost that fucking writer is on crack, what is with this narrative structure?
