I was thinking the other day about why I played so much Skyrim but only played one of the fallout games for a day before deleting it. These types of games are a grind, you're just repeating the same shit again and again to level up. What made Skyrim more than that was how charming the first 30 minutes is. I've sunk thousands of hours into vanilla console Skyrim, long before they added fishing and house-building, and what separates it from other grindfest video games is that you can enjoy it simply just playing it as a walking simulator.
Sure I had some other minor game goal in mind like collecting plants for ingredient, sneaky archer hunting deer & other animals for the sneak & archery increase as well as their crafting materials, maybe doing the bear-hunting side quest or something else, but I almost always avoided fast travelling.

A big part of it is the soundtrack, but also just how the overworld game looks and feels. Most caves and dungeons are nothing special, though I enjoy them probably more than the average Skyrim player. But just roaming across the swamps and hills with thermal vents and forests and walking by the rivers and climbing up and down snowy mountains - especially at night - made it a one of a kind video game experience.

The most comparable thing would be what it felt like to be playing minecraft for the first time back in the 2010s and you hear that first C418 song as you're in the middle of setting up your base or aimlessly digging dirt with your hands.
