When they did try to do that sort of material with Book of Bobba Fett they mostly fumbled it. Also episodic underworld stories don't lend themselves to setting up epic cinematic universe crossover events which the studio mandates must take up half of every episode's runtime.
The trailer for this got literally like 0 reaction in a packed theater when I saw it. I think Disney unironically killed Star Wars lol
