If you're into extreme cinema, some of the HK Category 3 movies are decent. Look up The Untold Story and Dr Lamb for an idea of what Cat. 3 movies are like. And since you like Woo definitely watch Bullet in the Head. But make sure it's the full uncut version. Oh, and Riki-Oh The Story of Riki is great.

Most of what anon listed is worth watching. Watch Police Story 1-2 and Supercop (Police Story 3) and Drunken Master 2 all starring Jackie Chan immediately if you want to see the very best HK kung fu choreography. Once Upon a Time in China 1-2 and Fist of Legend with Jet Li are also amazing kung fu movies from the early to mid 90s.

Stephen Chow's Chinese Odyssey 1+2 are seen as him going "legit" in dramatic acting. Fight back to School is his breakout. King of Comedy is his 1st as Chaplin-esque auteur.

For horror, def Boxer's Omen, Hex, Troublesome Night 1 (1997).

Wai Ka-fai (Johnnie To's writer) is quirky fun with heart. His debut Too Many Ways to be Number 1 is must-see.

Fruit Chan, kind of the HK Sean Baker, debut in Made in Hong Kong 1997 is must-see.

Golden Chicken 2002 is a screwball about a whore's life as the history of HK.

I watched a lot of Hong Kong stuff in general, martial arts mostly but some others too. this one was listed on sharereactor which was a torr site back in the day that put up descriptions and posters of new releases - had some good international films. it had sort of the old video rental shop feel to it, so you could pick and choose and explore a bit.
this one stood out for me because of the different feel, cool factor and quality of it.
i guess there are a lot it films that aren't scene simply because they're 'local', same for Japan and other countries.

I prefer to it to his Hollywood stuff. Police Story 3, Wheels on Meals, and Drunken Master 2 belong in his top ten. I like the story, the humor, the characters in Jackie's movies so I also love the first Drunken Master, but it's really ancient and it shows. I would hesitate to recommend them too far back. Rumble in the Bronx is also good. Just try them if you don't mind old movies.
Jackie Chan isn't just a stunt guy. People went to see his personality and comedy and he displayed that best in his HK movies as opposed to Rush Hour where he had to adapt to his comedy to Chris Tucker and the english speaking audience.
