His plan, Dooku's assumption, was that he was going to best Anakin in combat, and show to Palpatine he's da best to help lead the forthcoming Empire. The thing with Dooku was that he wasn't an addict to the dark side of the Force, he never completely gave himself over to it. It was more like Dooku himself allied with the Dark Side without fully joining it on a personal level. He had too much discipline to win the Sith game, this discipline he took with him after leaving the Jedi Order. Qui-Gon, his teacher, was very personally disciplined even though he didn't adhere totally to the Jedi Council. Dookie left the Jedi Order for different reasons compared to Anakin. Whereas Anakin had a dark side rebirth, a cleansing baptism of hell-fire, so to speak.

Palpatine is always looking to trade up. Dooku thought he'd win, or at the very least be arrested, or escape. Dooku was shocked to lose and hear Palpatine say to kill him. Dooku really had no clue what was going on, that Palpatine had zero loyalty to him and that Anakin was not a very aligned Jedi and would actually kill him. It happens so fast Dooku is dead before he can put it all together.

Lucas originally wrote dialogue of Dooku begging for his life, but Christopher Lee told George Dooku would never. So it was never filmed.

I think a major issue with Revenge of the Sith is that Grievous is a pointless character, the opening of the film is completely jarring in that you cant just open your film with something that should be a climax, a better situation could be Anakin and Obi-Wan are forcing to split up as Dooku and Grievous flee to two different locations and maybe Dooku additionally kidnaps Padme leaving Anakin with no choice but to pursue his personal reason and there is his tie to the dark side in killing Dooku seeking revenge while hating the Jedi for not wanting to help his wife.

When Obi-Wan kills Grievous Anakin has just freshly returned to Coruscant and find the Jedi in full coup mode and he intervenes to save his friend Palpatine who he also has no idea is a Sith Lord until after the fact but paints himself more as an alternative force user the Jedi dont like because they want a monopoly on the force which is clear as day to Anakin as they tried to kill him.
