why didn't they fly eagles to Mordor and destroy the ring once and for all?

It's perfectly reasonable to assume flying over Mordor itself would mean certain death. It's a well-guarded fortress. However, it's also reasonable to ask them for a lift to Gondor. As >>217409159 points out, it would be a short flight and Gandalf would owe them one. In Gondor, Aragorn could be crowned king and strategically prepare for war instead of risking his life day after day on foot. Boromir would have survived too.
